Aloha Loaf
Aloha Loaf is an moderately easy dinner. Made with 1/2 c. margarine or butter, 1 c. sugar, 2 eggs, 1 ripe banana, mashed and 2 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350Β°.
In medium bowl, cream margarine and sugar until light and fluffy.
Add eggs and beat well.
Stir in banana.
Sift flour, baking powder, baking soda and salt into creamed mixture; mix well.
Fold in undrained pineapple and coconut.
Pour into greased and floured 9 x 5-inch loaf pan.
Bake for 1 hour and 10 minutes or until pick inserted in center comes out clean.
Makes 1 loaf.
