Almond Chicken
Almond Chicken is an impressive dinner. Made with 1 c. mayonnaise, 3 tbsp. lemon juice, 1/4 c. chopped onion, 2 c. diced, cooked chicken and 2 c. chopped celery, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Remove bones and skin from chicken.
Pound flat with heavy pan; cut in half.
Arrange slice of cheese and ham on each piece of chicken.
Fold short sides over filling; roll up lengthwise. Secure with wooden toothpicks.
Dust with flour; dip into beaten egg.
Coat with crumbs.
Arrange rolls on microwave tray or baking dish; dot with butter.
Cover lightly with waxed paper.
Microwave on High for 4 minutes.
Uncover; microwave 2 minutes more or until chicken is tender.
Season to taste with salt and pepper.
