Alex Kalberer's Aspen Spinach
Alex Kalberer'S Aspen Spinach is an moderately easy dinner. Made with 2 pkg. frozen spinach, thawed and drained, 8 oz. sliced, fresh mushrooms, 1 small bottle marinated artichoke hearts, 8 oz. cream cheese and 2 to 3 tbsp. milk, this recipe delivers authentic, satisfying flavors. Grease square oven dish with oleo.
Drain marinade from artichokes and put marinade into frying pan.
Cut artichoke hearts in 1/2 or 1/3 and put into dish.
Saute mushrooms slightly in marinade until tender.
Put mushrooms in dish; salt and pepper. Put spinach layer on next.
Mix cream cheese and milk until icing consistency.
Spread over spinach.
Sprinkle with Parmesan cheese. Bake at 350Β° until golden and slightly bubbly, approximately 20 minutes.
