Agnes Lyons Pepper Relish
Agnes Lyons Pepper Relish is an moderately easy dinner. Made with 24 green peppers, 24 red peppers, 20 onions, 5 lb. sugar and 1/2 gal. cider vinegar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Wash, clean and drain peppers.
Grind peppers fine.
Squeeze and drain again after grinding.
Grind onion.
While grinding onions, prepare a pot of boiling water.
Onions should have boiling water over them for 10 minutes.
Drain and put 3 trays of ice cubes to cool onions.
Put onions in pot and add all other ingredients except spices.
Put spices in cheesecloth and let it float in pickle after it starts to boil for 10 minutes.
Makes 12 pints.
