Acorn Squash Rustica
Acorn Squash Rustica is an moderately easy dinner. Made with 2 small acorn squash, 3 tsp. butter or margarine, divided, 1 small onion, finely chopped (1/4 cup), 1/4 cup chopped celery and 1 1/2 cups packaged dry stuffing mix for turkey or chicken, prepared according to package directions, this recipe delivers authentic, satisfying flavors. Carefully cut squash in half horizontally (not through stem end). Remove seeds and stringy portions.
Using 1 tsp. butter, rub the cut surfaces of squash.
Place cut-side-up in shallow baking pan with 1/2 inch water.
In small skillet melt 2 tsp. butter. Saute onions and celery until tender.
In medium bowl combine sauteed vegetables, prepared stuffing, turkey and orange pieces. Spoon into squash halves.
Cover squash loosely with foil. Bake in preheated 375Β° oven for 30 minutes. Remove foil, bake 15 minutes longer or until squash is tender and stuffing is lightly browned. Let stand 5 minutes before serving.
Makes 2 servings.
