A Good Rice Pudding
A Good Rice Pudding is an moderately easy dinner. Made with 1 c. rice, 1 qt. milk, 1 1/2 c. sugar, divided, spice to suit the taste and salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Boil the rice for half an hour in four times its bulk of water.
If raisins are used, boil them with the rice.
Add the milk, sugar, spice, salt and the whole of one egg and yolks of the other two, saving the whites for frosting.
Bake about an hour or until done, then beat the whites to a froth.
Add half a cup of sugar.
Spread over top.
Return to the oven a few minutes to brown.
