Zucchini Squash Casserole
Zucchini Squash Casserole is an moderately easy dinner you can prepare in about 2 hours 14 minutes. Made with c. squash, peeled and diced, medium onion, diced, c. cream of mushroom or cream of chicken soup, (8 oz.) sour cream and (8 oz.) box cornbread dressing mix, this recipe delivers authentic, satisfying flavors. Melt margarine and mix with stuffing mix; set aside. Cook squash until fork-tender.
Drain well.
Add soup, salt and pepper, sour cream and chopped onion and mix with the drained squash.
In a 1 1/2 quart casserole dish (sprayed with liquid shortening), place the stuffing mix in bottom. Spoon on squash mixture.
Top with rest of stuffing mix.
Bake at 350Β° for 30 minutes.
