Zucchini Soup
Zucchini Soup is an moderately easy dinner. Made with 1 lb. italian sweet or hot sausage, casing removed and cut in 1/2 inch pieces, 2 c. celery, cut in 1/2 inch pieces, 2 lb. zucchini, sliced in 1/2 inch pieces, 1 c. chopped onion and 2 cans (28 oz. each) tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
You may use more sausage and zucchini if desired.
Also less or more salt to taste.
Brown sausage in a large Dutch oven; drain off excess fat.
Add celery and cook for 10 minutes, stirring occasionally.
Add all remaining ingredients, except green pepper. Simmer covered 20 minutes.
Add green peppers and cook covered 10 minutes.
Makes 3 1/2 quarts.
