Zucchini Rounds
Zucchini Rounds is an moderately easy dinner. Made with 1/3 c. biscuit mix, 1/4 c. grated parmesan cheese, 1/8 tsp. pepper, 2 slightly beaten eggs and 2 c. shredded unpared zucchini, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs just till mixture is moistened.
Fold in zucchini.
In 10 skillet, melt butter or margarine over medium heat.
Using 2 Tbsp. mixture for each round, cook four rounds at a time, about 2-3 min. on each side or until brown.
Makes 12 rounds or 6 servings.
