Zucchini Puffs
Zucchini Puffs is an moderately easy dinner. Made with 3 slices provolone cheese (if desired, other cheese may be used), 2 c. shredded zucchini, 3 tbsp. chopped onions, 1/2 c. bread crumbs and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Grate cheese in a blender if available, or chop finely. Remove stem ends from zucchini and shred finely.
Press out as much moisture as possible from zucchini using paper towels. Combine with onion, crumbs, salt, pepper, parsley and eggs.
Put 1 teaspoon oil in each of twelve muffin cups.
Heat at 375Β° for 3 or 4 minutes.
Carefully spoon batter into sizzling oil.
Bake 20 minutes.
Makes 12 puffs.
