Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with 1 pkg. crescent rolls, 1 stick oleo, 1/2 c. chopped onion, 4 c. thinly sliced zucchini, peeled and cored and salt and pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Place 8 crescent rolls in pie plate, forming a crust.
Spread 2 tablespoons mustard on crust.
Melt oleo in skillet.
Add onion, zucchini, salt and pepper (to taste).
Cook 10 minutes.
Beat 2 eggs in bowl and add 2 cups of cheese.
Stir together zucchini, eggs and cheese with seasonings.
Place in pie shell and bake 10 minutes at 375Β°.
Cover with foil and bake 10 minutes more until set.
Let stand a few minutes before slicing.
