Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with 2 c. cooked zucchini, 1 1/2 c. brown or white sugar, 3 eggs, well beaten, 1/3 c. all-purpose flour and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Cook zucchini in boiling water until tender.
Drain.
Place zucchini in blender for 1 minute.
In large bowl, mix all other ingredients; mix well.
Now add zucchini to that mix and pour in pan.
Sprinkle with coconut.
Bake at 350Β° for 25 to 30 minutes or until coconut is brown.
