Zucchini Pickles
Zucchini Pickles is an moderately easy dinner. Made with 4 quarts zucchini chunks, 6 onions, sliced, 2 green peppers, sliced, 2 cloves garlic or 1/2 tsp. garlic salt and 5 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Do not peel zucchini, wash and cut and remove seeds.
Add onion, pepper, garlic and salt.
Cover with cracked ice.
Mix and stand 3 hours.
Drain.
Combine vinegar, spices, sugar, chilies and liquid.
Heat to boil.
Add zucchini and reheat to boil.
Lower heat and simmer briefly.
Process.
Makes 10 pints plus.
