Zucchini Pickles
Zucchini Pickles is an moderately easy dinner. Made with 8 c. sliced zucchini, 2 c. chopped onions, 2 c. sliced bell pepper, 3 c. sugar and 2 c. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
π¨βπ³ Instructions
Mix zucchini, onions and bell pepper.
Sprinkle with salt and let stand 1 hour, then drain.
Combine sugar, vinegar, mustard seed, celery seed and heat to boiling.
Boil 2 or 3 minutes.
Add squash to mixture, then bring to boil for 2 or 3 minutes.
Put in jars and seal.
Makes 4 pints.
