Zucchini Parmesan
Zucchini Parmesan is an easy dinner. Made with 6 to 8 large zucchini, your favorite spaghetti or lasagna tomato sauce with or without meat (16 oz.), 16 oz. mozzarella cheese and parmesan cheese (to taste), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Parboil whole zucchini; allow to cool.
Slice 1/4 to 1/2-inch thickness; allow water to drain on paper towels.
Grate Mozzarella cheese.
Layer ingredients in baking pan in following order
1) sauce 2) zucchini slices 3) Mozzarella and Parmesan cheese.
Go back to 1.
Top layer should be cheese.
Cover with aluminum foil and bake at 350Β° for 1 hour.
Last 15 minutes, bake, uncovered, to allow cheese to brown slightly.
