Zucchini-Orange Bread
Zucchini-Orange Bread is an impressive dinner. Made with 4 eggs, 1 1/2 c. sugar, 3/4 c. oil, 2/3 c. orange juice and 2 c. shredded unpeeled zucchini, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat oven to 350Β°.
Grease and flour bottom only of two 8 x 4 or 9 x 5 loaf pans.
In large bowl, beat eggs until thick and lemon colored.
Add sugar gradually.
Stir in oil, 2/3 cup orange juice and zucchini.
Lightly spoon flour into measuring cup; level off. Stir in remaining bread ingredients; mix well.
Pour batter into prepared pans.
Bake for 45 to 55 minutes or until toothpick inserted in the center comes out clean.
Cool 10 minutes.
Remove from pans; cool slightly in small bowl.
Blend glaze ingredients and spread over warm bread.
