Sift together dry ingredients, except sugar.
Combine eggs, vegetable oil, sugar, zucchini and extracts in a separate bowl and beat well.
Stir flour mixture into wet ingredients; mix until smooth.
Add raisins, nuts and chopped dates last and stir.
Pour into 9 x 5-inch loaf pans or muffin tins.
Bake at 350Β° for about 45 minutes for loaves and 20 minutes for muffins.
