Zucchini Loaf
Zucchini Loaf is an moderately easy dinner. Made with 1 1/2 c. flour, 1 tsp. baking powder, 1/2 tsp. baking soda, 1/4 tsp. salt and 2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine dry ingredients and set aside.
In a large bowl, combine eggs, sugar, oil and vanilla.
Beat well in mixer.
Stir in squash.
Add dry ingredients, stirring only until moistened. Optional nuts and/or raisins may be stirred in.
Pour into greased and floured 9 x 5 x 3-inch loaf pan.
Bake at 350Β° for 50 minutes or until done.
Test with toothpick.
Let remain in pan 10 minutes, then remove to cool.
