Zucchini Jelly is an easy dinner. Made with 6 c. squash, grated, 6 c. sugar, 1/2 c. lemon juice and 1 (6 oz.) pkg. apricot jell-o, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Grate squash.
Boil without water for 15 minutes until clear. Add sugar and lemon juice.
Boil 6 minutes.
