Zucchini Jelly
Zucchini Jelly is an easy dinner. Made with 6 c. grated zucchini, 1/4 c. lemon juice, 1 c. crushed pineapple, 6 c. sugar and 1 large pkg. jell-o (strawberry, peach or apricot), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook zucchini and lemon just on low heat (simmer) for 15 minutes.
Add pineapple and sugar; bring to a boil.
Remove from heat and stir in Jell-O.
Pour into jars and seal.
Serve it over biscuits or in pinwheel tea sandwiches.
