Combine first 5 ingredients.
Stir in nuts.
Peel zucchini and shred enough for 2 cups.
Combine zucchini and remaining ingredients. Add to flour mixture, stirring until dry ingredients are moistened.
Spoon batter into 2 greased loaf pans. Bake at 350Β° for 1 hour and 5 minutes or until done by testing with a toothpick.
Cool in pans for 10 minutes.
Turn out of pans and cool.
