Zucchini Cupcakes
Zucchini Cupcakes is an moderately easy dinner. Made with 3 eggs, 1 c. oil, 2 c. sugar, 2 c. shredded zucchini and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat eggs until frothy.
Add oil, sugar, zucchini and vanilla. Add dry ingredients.
Fill paper baking cups 1/2 to 2/3 full with batter.
Sprinkle top of batter with sugar and cinnamon.
Top each with 3 or 4 chocolate chips.
Bake in a 375Β° oven for 20 minutes. No need to frost.
These also freeze well.
