Zucchini Casserole is an easy dinner. Made with 6 c. diced zucchini, 1/4 c. chopped onion, 1 can cream of chicken soup, 1 (8 oz.) pkg. stove top stuffing and 8 oz. sour cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook zucchini and onions until soft; drain into another bowl. Combine soup and sour cream.
Pour over zucchini and onions; pour in stuffing mix and mix well.
Bake 10 to 12 minutes in 350Β° oven. I bake it in a 9 x 5 x 3-inch loaf pan.
