Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 1/2 c. peeled and thinly sliced zucchini, 1/4 c. thinly sliced onions, 2 to 3 tbsp. vegetable oil, 1 can cream of chicken soup and 8 oz. sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute zucchini and onion in oil until tender and drain.
Mix together soup, sour cream and carrots.
Add to zucchini and onion. Melt butter and combine with stuffing mix.
Put half of the stuffing mix on the bottom of a medium size baking dish.
Cover it with the zucchini mixture.
Top with remaining 1/2 of stuffing mix. Bake at 350Β° for 30 to 40 minutes.
