Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. zucchini, sliced thin, 1/2 c. onion, 1 c. grated carrots, 1 (6 oz.) box stove top stuffing and 1/2 c. margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Parboil zucchini and onion for 5 minutes and drain.
Mix sour cream and cream of chicken soup and carrots together, then fold in zucchini.
In small bowl, mix stuffing and melted margarine.
In casserole, place 1/2 stuffing on bottom, then all of the zucchini; mix and place remaining stuffing on top.
Cover and bake at 350Β° for 30 minutes.
