Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 medium zucchini, peeled and sliced 1/2-inch, 3/4 c. shredded carrots, 1/2 c. chopped onion, 1/2 c. sour cream and 3 c. herb seasoned stuffing mix, this recipe delivers authentic, satisfying flavors. Cook zucchini in salt water until tender.
Cook onion and carrots in butter for about 10 minutes in a large skillet.
Stir in sour cream, 2 cups stuffing mix, zucchini and soup.
Mix and pour into an uncovered buttered dish and put remaining butter on top.
Bake at 350Β° for 30 minutes.
