Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 4 oz. sour cream, 1 can cream of mushroom or celery soup, 1/2 pkg. pepperidge farm stuffing mix or equivalent, 2 shredded carrots and 1 small onion, grated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix butter and stuffing mix together.
Cook zucchini in boiling water for about 2 to 3 minutes and drain.
Toss 1/2 stuffing mixture, zucchini and other ingredients together.
Pour into casserole dish.
Top with remaining stuffing mix and bake, uncovered, for 30 minutes or until bubbly in a 350Β° oven.
