Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 boxes chicken stuffing mix, 5 c. zucchini, peeled and cubed, water, 3 shredded carrots and 3 sticks margarine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix stuffing mix with margarine; set aside.
Place zucchini and onion in pot with enough water to cover.
Boil 5 minutes; drain and cool.
Mix zucchini and onion with soup, carrots and sour cream.
Place half of stuffing in 9 x 13-inch baking dish. Pour zucchini mixture in and cover with remaining stuffing mixture.
Bake at 350Β° for 25 to 35 minutes.
Cover with foil until last 10 minutes.
