Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1/2 lb. ground chuck, 1/3 c. chopped onion, 1 (15 oz.) can tomato sauce, 1/2 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large skillet on medium heat, saute onion.
Add ground beef.
Cook for 10 minutes.
Spoon off fat; add garlic, tomato sauce, salt and pepper.
Heat to boiling; reduce heat; simmer for 5 minutes or so.
Preheat oven to 350Β°.
Slice zucchini lengthwise 1/4-inch thick.
Combine cottage cheese with egg.
Use 13 x 9 x 2-inch dish.
Layer zucchini on bottom.
Top with cottage cheese mixture and 1/2 meat mixture.
Add another layer zucchini strips. Sprinkle flour over zucchini.
Put on remaining meat mixture.
Top with Mozzarella cheese.
Bake 40 minutes, sometimes longer if I use more meat and sauce.
