Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 2 lb. zucchini squash, 1/2 lb. sausage, 1/4 c. finely chopped onion, 1/2 c. cracker crumbs and 2 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat oven to 350Β°.
Wash squash; trim off ends.
Cut in chunks and cook in boiling water for 10 minutes.
Use small squash, not over 2 pounds.
After cooking, drain squash.
Put onion and sausage in skillet and cook until sausage is brown.
Drain off fat.
Use a little of the fat to oil casserole dish.
Combine squash, sausage, crumbs, beaten eggs, thyme, salt and half of cheese.
Put mixture in shallow baking dish.
Sprinkle with remaining cheese on top.
Bake 30 to 40 minutes.
