Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 6 c. sliced zucchini, 1/2 c. chopped onion, 1 c. shredded carrots, 1 can cream of mushroom soup and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cover zucchini, onion and carrots with water and boil a few minutes; drain.
Mix together soup and sour cream; mix with vegetables.
(If using a 9 x 13-inch pan, prepare 2 packages stuffing mix with 1 cup margarine.)
Mix stuffing and margarine. Put one half of stuffing mixture in the bottom of a buttered casserole.
Add vegetable mixture.
Top with remaining stuffing mixture.
Bake at 350Β° for 45 minutes.
