Zucchini Carrot Cake is an impressive dinner. Made with 1 1/4 c. sugar, 1 c. vegetable oil, 3 eggs, 1 1/2 c. grated zucchini and 1 c. grated carrots, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream sugar and oil.
Beat in eggs.
Add zucchini and carrots. In separate bowl, sift together dry ingredients and add gradually to zucchini-carrot mixture.
Stir in orange juice, rind and nuts. Bake in greased loaf or tube pan at 350Β° for 30 to 35 minutes. Check for doneness.
Cool and remove.
