Zucchini Cakes is an moderately easy dinner. Made with vegetable oil, 3 c. shredded unpared zucchini, drained, 1/2 c. shredded cheddar cheese, 3 tbsp. snipped parsley and 1 large clove garlic, finely chopped, this recipe delivers authentic, satisfying flavors. Heat oil in 10-inch skillet.
Mix zucchini, cheese, parsley, egg, salt and pepper; stir in baking mix.
Drop by rounded tablespoon into hot oil.
Fry until golden brown, about 1 minute on each side; drain.
Makes about 2 dozen cakes.
