Beat eggs. Add oil, sugar, zucchini, then add flour, baking powder, soda, salt, vanilla, cinnamon and nuts. Grease and flour pans. Bake in 9 x 13 pan for 35 minutes at 350°.
You may bake in 2 loaf pans about 1 hour at 350° or five 4-inch by 8-inch loaf pans for 40 minutes or Bundt pan for 40 minutes.
