Zucchini Cake
Zucchini Cake is an moderately easy dinner. Made with 3 eggs, 1 c. oil, 2 c. sugar, 3 tsp. vanilla and 2 c. grated zucchini, excess liquid drained off, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs until foamy.
Add oil, sugar, vanilla and zucchini. Mix lightly but well.
Add flour, cinnamon, salt, soda, baking powder and nuts.
Pour into well-greased loaf pan.
Cook for 45 to 60 minutes, or until toothpick comes out clean, at 350Β°.
(Can frost if desired.)
