Zucchini Cake
Zucchini Cake is an moderately easy dinner. Made with 1 1/2 c. sugar, 1 c. margarine, 1 tsp. vanilla, 2 large eggs and 2 1/2 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream sugar, margarine, vanilla and eggs.
Beat on high 5 minutes.
Add flour, sour cream, cocoa, baking soda and salt.
Beat on low until combined.
Scrape bowl and beat 1 minute on medium.
With spatula, fold in zucchini and chips.
Spread batter (will be thick) in greased 13 x 9-inch pan.
Bake 40 to 45 minutes at 350Β°. Makes 12 servings (505 calories each).
