Zucchini Cake
Zucchini Cake is an impressive dinner. Made with 2 c. grated zucchini, seeds taken out, 1/3 c. chocolate chips, 1 stick margarine, 1/2 c. oil and 1 3/4 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream together margarine, oil and sugar.
Let milk and vinegar set for 10 minutes and then beat together.
Mix together all ingredients except first two (zucchini and chocolate chips).
Add zucchini and mix well.
Pour into greased 9 x 12 x 2-inch pan. Sprinkle chocolate chips over top of cake.
Bake at 325Β° for 45 minutes.
