Beat eggs.
Add oil, sugar, sugar substitute, vanilla, pineapple and zucchini.
Sift flours, baking powder, baking soda, cinnamon, nutmeg and salt.
Add to egg mixture.
Add nuts, if desired.
Bake at 375Β° in well-greased loaf pans for 40 minutes. Cool on wire rack.
May be frozen.
