Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 1/4 c. sugar, 1 tbsp. vanilla, 3 c. flour and 1 1/4 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat eggs in bowl until foamy.
Add sugar, vanilla and mixture of flour, baking powder, soda, salt and cinnamon; mix well.
Stir in oil, dates, nuts and zucchini; mix well.
Divide between 2 lightly greased and floured loaf pans.
Bake at 350Β° for 1 hour or until tests done.
Cool on wire rack then remove from pans.
