Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 1 c. salad oil, 2 c. sugar, 2 c. grated, peeled squash and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Beat eggs until light and foamy.
Add next 4 ingredients.
Mix lightly, but well.
Add to flour mixture and blend.
Add nuts. Bake in 4 small loaf pans, well greased, for 45 minutes at 325Β°. Remove from pans immediately and cool.
Great for freezing.
Makes 4 small loaves or two 9-inch square pans.
