Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 2 c. grated, unpeeled zucchini, 2 c. sugar, 1 c. vegetable oil, 3 eggs and 2 tbsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large bowl, mix zucchini, sugar, oil, eggs and vanilla with a big spoon.
Add flour, baking soda, salt and cinnamon.
Mix well.
Fold in nuts and raisins.
Grease and flour two 9 x 5-inch loaf pans.
Divide batter into 2 pans.
Bake 70 minutes at 350Β°. Cool 10 minutes in pan, then cool on rack.
Freezes well.
