Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 1/4 c. sugar, 3 tsp. vanilla, 1 c. vegetable oil and 2 c. unpeeled, grated zucchini, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Beat eggs until fluffy.
Beat in sugar, vanilla and oil.
Stir in zucchini.
Sift flour, baking powder, baking soda, salt and cinnamon.
Add to zucchini mixture, blending well.
Stir in nuts. Pour into 2 greased and floured 9 x 5-inch loaf pans.
Bake in preheated oven at 350Β° for 45 to 60 minutes or until done.
Makes 2 loaves.
