Zucchini Bread

Beat eggs, sugar, salad oil and vanilla.
Add zucchini.
In a separate bowl, sift the flour, salt, cinnamon and soda.
Mix with liquids.
Add nuts.
Bake in 3 greased 8 x 4 x 2 1/2-inch loaf pans at 325Β° for 1 hour.
Yields 3 loaves. This is good with cream cheese filling.
