Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 c. sugar, 1 c. vegetable oil, 2 c. grated raw zucchini and 3 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Heat oven to 350°.
Beat eggs until light and foamy.
Add sugar, oil, zucchini and vanilla and mix lightly and well. Combine flour and cinnamon and add to the egg and zucchini mixture.
Stir until well blended.
Add nuts and raisins and pour into three (9 x 5 x 3-inch) loaf pans.
Bake at 350° for 1 hour. Cool on rack.
