Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 large eggs, 3/4 c. sugar, 1 c. vegetable oil, 2 c. raw, peeled grated zucchini and 1 tbsp. vanilla, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Combine in mixing bowl and mix well eggs, sugar, oil, zucchini and vanilla.
Sift together flour, salt, baking powder and cinnamon.
Add to zucchini mixture and stir until blended.
Add nuts.
Pour into 2 greased pans (8-inch bread pans).
Bake 1 hour.
Remove from pans and cool on rack. Makes 2 loaves.
