Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 2 1/4 c. sugar, 3 tsp. vanilla, 1 c. crisco oil and 2 c. grated zucchini, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat eggs until light and fluffy.
Add sugar, vanilla and oil; blend well.
Stir in zucchini.
Stir together flour, baking powder, salt, baking soda and cinnamon.
Blend into creamed mixture.
Fold in the nuts.
Turn into 2 greased and floured 9 x 5 x 2-inch loaf pans.
Bake at 350Β° for 1 hour.
