Beat eggs until light and foamy.
Add oil, sugar, grated zucchini and vanilla.
Mix lightly, but well.
Add remaining ingredients.
Mix until blended.
Divide batter into two well-greased 9 x 5 x 2-inch loaf pans.
Bake at 325Β° for 1 hour or until bread tests done.
Remove from pans.
This freezes well.
