Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 1 1/2 cup sugar, 3 med. zucchini, grated well (2 cups), 3 eggs, 2 tsp. vanilla and 2 cups sifted flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs lightly in a large bowl.
Stir in oil, sugar, zucchini and vanilla.
Sift flour, baking powder, baking soda, cinnamon and salt onto wax paper.
Stir into egg mix until well blended; stir in raisins and nuts.
Spoon batter into 2 well-greased 8 x 5 x 3 inch loaf pans.
Bake in 375 oven for 1 hour.
Cool on rack for 10 minutes.
Remove.
Cool completely.
