Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, beaten, 2 c. sugar, 1 c. vegetable oil, 1 tsp. vanilla and 2 c. grated zucchini, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine eggs, sugar, oil and vanilla in a large mixing bowl; beat well.
Stir in zucchini.
Sift together dry ingredients; add to zucchini mixture.
Fold in pecans.
Turn into 2 well-greased 9 x 5 x 3-inch loaf pans.
Bake in 350Β° gas oven for 1 hour or until done.
Cool in pans 5 minutes.
Remove and finish cooling on rack. Makes 2 loaves.
