Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, 1 c. oil, 2 1/2 c. sugar, 2 c. grated raw zucchini and 2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs; gradually beat in oil and sugar.
Add zucchini, cinnamon, salt, baking soda and baking powder; mix well. Gradually blend in flour, mixing well after each cup.
Fold in nuts if desired. Pour into greased Bundt pan or two loaf pans. Bake at 350Β° for 60 minutes.
Remove and store in covered tin or wrap in foil.
Allow bread to cool for 10 minutes before removing from pan.
Makes 12 servings.
